If you’ve been to Maritime Parc in Jersey City, you know its spectacular NYC views (made even more magical by the event venue’s floor-to-ceiling windows) are just one reason why it’s such a special spot. The waterfront event space and restaurant is known for its fresh seafood (hello grilled oysters), inventive cocktails and popular Sunday brunch, all of which are the brainchild of Chef Chris Siversen.

Siversen is also the chef/owner and driving inspiration behind The Feathered Fox, the recently opened sushi and steakhouse restaurant and lounge inside Livingston’s Westminster Hotel. Unlike traditional steakhouses, The Feathered Fox has a more modern vibe thanks to rich blue walls, copper accents and saturated gem tones throughout the bar and restaurant. Even the restaurant’s name evokes a more playful feel than your everyday steakhouse and is meant to be a take on the ‘hunt for a mystical creature.’

The menu is a departure from your traditional steakhouse since it offers a variety of choices—from a traditional steak dinner to sushi to a raw bar. The cocktails and extensive wine list are pretty stellar, too.
We spent a recent Thursday night at the new hot spot and sampled the steak, sushi, apps and creative cocktails. You really can’t go wrong with a traditional cut of prime steak or chops. The Porterhouse here is a staple that any steakhouse fan will savor and there’s a special cut you can order for two. On the recommendation of the staff, we ordered the Dry Aged Bone-In Ribeye and it was perfectly prepared, and delicious even without the restaurant’s must-try signature sauces.
The sushi choices are equally impressive. A few standouts we loved are the Feathered Roll with glazed spicy mayo, salmon, avocado and spicy tuna that has the perfect amount of crunch. The Truffle Scallop Roll packs the blissful combo of eel, avocado, torched scallop and, of course, truffle oil and black truffle salt. If you’re looking for more of a kick, order the Essex Roll. Trust us. This has kani salad, tempura, spicy tuna, jalapeno, spicy aioli and tobiko and lots of crunch.

Save room for side dishes, which are both inventive and addictive. Let’s just say we’re still thinking about the Mashed Potato Rings. This genius creation of a starter looks like an oversized onion ring only it’s a potato ring with crisp on the outside and mashed potatoes on the inside.
The Feathered Fox has also managed to totally reinvent garlic bread and it’s a must-try. You’ll get warm bread blocks of garlic goodness with crispy parsley stacked on top of a creamy blue cheese dipping sauce.
Siversen’s other standout signature dishes include Spanish Octopus with olives, crispy potatoes and a creamy tomato feta dressing and the Lobster Cavatelli, which will satisfy your craving for fresh lobster and is served with Brussels, veggies and a signature lobster sauce.
Among the dessert standouts are the next-level Strawberry Tiramisu, a vanilla chiffon cake with elderflower soak, strawberry and marscapone cream, basil ice cream, dehydrated strawberries and champagne bavrois. We also tried the ethereal Baked Alaska, a twist on the classic dish with watermelon ice cream, lemon cake, goat cheese white chocolate sauce and coconut crumble.
Start your meal with a signature cocktail. Margarita fans will love the Chili Mango Marg with Casamigos Blanco tequila and Cointreau transformed by pineapple juice, mango puree and chili sea salt. The Yellow Bee is a delightful tequila-based drink with honey, yellow chartreuse and lime juice while the Salted Grapefruit Negroni puts a new spin on a classic cocktail. We also sampled the seasonal special, the Basil Berry Limonada, which featured gin, basil, blackberries and homemade lemonade, for a light and fresh treat.

We went for dinner but The Feathered Fox is also a fun spot for wine and cocktails, too. The thoughtful and extensive wine list will impress even your most selective connoisseur friend and the bar atmosphere is great for your next happy hour. The Feathered Fox also has a private party room for your intimate dinners away from the rest of the restaurant.
