Flemington’s Historic Union Hotel Is Reopening With a Boutique Feel

The Hunterdon County hotel will reopen with a steakhouse and speakeasy

After an extensive redevelopment, Flemington’s Union Hotel will open on July 15 as a boutique hotel and dining destination. The historic property, which dates back to 1814, has been reimagined with new guest rooms, restaurants and a speakeasy.

The restored hotel has 100 guest rooms, including 10 suites, and is pet-friendly. Located within Courthouse Square on Main Street, the hotel was rebuilt with the goal of preserving its history while modernizing the rooms.

“Throughout the redevelopment process, great care was taken to preserve and restore as many original architectural elements and historic details of the property as possible,” Developer Jack Cust said in a statement.

The Union Hotel will operate under Concord Hospitality and become part of Marriott’s Tribute Portfolio. Guests will have access to Marriott Bonvoy benefits, though the hotel is designed to maintain the feel of an independent boutique property. The hotel will include spaces for weddings and events for gatherings of up to 140 guests.

A New Steakhouse and Speakeasy

Jersey Prime, a modern Italian steakhouse led by Executive Chef Andrew Lattanzio, will also debut. Designed as a modern supper club, the menu will include steaks dry-aged in-house, house-made pastas, seafood, a raw bar, cocktails, and a curated wine list. The steakhouse will source its seasonal produce from Hunterdon County farms.

Guests will also be able to find JP’s Speakeasy tucked inside the hotel. The speakeasy will serve craft cocktails and have a moodier setting for happy hour and late-night drinks.

Later this year, Courthouse Square is set to open FIELDHOUSE SOCIAL, a sports bar with duckpin bowling, golf simulators, interactive darts and shuffleboard. It will also feature large-screen game viewing, self-serve beer and wine walls, and cocktails.
