A Cleaner Slice: Sourdough Crust and No Seed Oils at Bucky’s Pizza in Chatham

We love the Detroit- and New York-style pies

When Domenick Calise opened Bucky’s Pizza in Chatham last year, one of his biggest goals was to make a pie his toddler daughter could enjoy without the questionable ingredients found in some slices. The result is a sourdough-crust pizza made with seed-free oils.

Bucky’s is named after Anthony “Bucky” Savarese, Dom’s wife’s grandfather. In 1914, his family opened 5th Avenue Fish on the corner of 5th Avenue and Lincoln Place in Park Slope, Brooklyn. The market closed in 1995, but his family eventually decided to take his passion for food and turn it into a new business. Dom was laid off right before his daughter Olivia was born. Since his family had been making pizza every weekend during the COVID shutdown, he took the leap and opened a mom-and-pop biz.

He decided to craft Bucky’s after his grandfather’s traditions, with old-world technique, natural fermentation processes, and sourcing high-quality ingredients without seed oils or additives. Now, the food truck-turned-storefront is popular for its Detroit-style personal pizzas, New York-style round pies, and Grandma square.

We recently got to try the pizza and the hype is real and the dough is really that good. The Detroit-style is the most unique, since it’s made like a personal pizza and has a 3-inch-thick, fluffy crust. Toppings include broccoli rabe & sausage, white or red sauce with mushroom, vodka sauce, sausage and onion with chili oil, and cacio & pepe.

The New York-style round delivers on the traditional favorite. We especially loved the hot honey pepperoni with ricotta.

The Grandma only comes as a square pie, but has a thinner, crispier crust than a typical Sicilian, and is loaded with sweet sauce and basil.

Other menu items include meatballs, Caesar salad, garlic knots, and a super garlicky family-sized calzone.

House-made desserts include olive oil cake made with Limoncello, chocolate chip or pistachio cannoli, or huge chocolate chip cookies topped with flaky salt.

And be sure to ask about gluten-free food options, too.

Bucky’s Pizza is located at 465 Main St., Chatham. Hours are 12-8 pm Tuesday to Saturday, and 12-7 pm Sunday (closed on Monday).
