Ingredients:
- 1 tbsp. vegetable oil
- 1 medium onion chopped (about 1 cup)
- 2 stalks celery, thin sliced (about 1/2 cup)
- 1 jalepeno seeded and finely chopped
- 1 pkg. of chicken breasts (3) chopped into 1/4 inch pieces
- 2 minced cloves of garlic
- 1 28 oz. can whole tomatoes undrained but cut up
- 2 1/2 cups water
- 1 15.5 oz. can pinto beans (rinsed)
- 1 cup of frozen corn
- 2-3 tspn. chili powder
- 1 tspn. cumin
Directions:
Prep Time: 15 minutes
Heat oil in saucepan on med heat. Add chicken till lightly brown. Add more oil if needed, then add onion, celery, pepper and garlic. Saute another 3-5 minutes. Stir in remaining ingredients. Simmer 15-20 minutes. Remove from heat. Stir in finely chopped cilantro (to taste -1 tablespoon to 1/4 cup).
