Fewer meals involve as much prep— and leftovers—as Thanksgiving. How long are you leaving your feast out after everyone eats?

Here’s how to keep dinner safe:

• Don’t rinse your turkey before cooking. Rinsing spreads bacteria around your kitchen.

• Cook stuffing in a separate dish so it can reach a safe temperature of 165 degrees (which doesn’t always happen inside the turkey cavity).

• Don’t let leftovers sit out at room temperature for longer than two hours.
