Grandma Marjie’s Homemade Apple Cake

You’ll need:

  • apple2 cups peeled & finely diced apples (2 apples – Golden Delicious or Granny Smith are best)
  • ½ cup sugar
  • ¼ cup vegetable oil
  • 1 egg, beaten
  • 1 cup flour
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 tsp. vanilla
  • ½ cup chopped walnuts (optional)

Directions:

Mix apples and sugar in a large mixing bowl, then let stand for ½ hour. Add oil and egg—blend. Mix and sift flour, cinnamon, baking soda, and salt. Stir in. Add vanilla and walnuts. Turn into well-greased and floured 8-inch square cake pan. Bake at 350° for 45–50 minutes or until cake tester comes out clean. Cool in the pan for 10 minutes and then on a cake rack. Serve apple cake plain or dusted with confectioners’ sugar, whipped cream, or ice cream.
