Egg Salad Sandwich

This #Good4U sandwich is great for any occasion!

Egg Salad Sandwich

Ingredients:

  • 3 eggs, hard boiled
  • 2 tsp chopped celery
  • 2 Tbsp light mayonnaise
  • 1/8 tsp black pepper
  • 2 slices light whole wheat bread, toasted if desired
  • 2 lettuce leaves

Directions:

Chop 1 whole egg.  Discard the egg yolks of the other 2 eggs and chop egg whites.  In a bowl, combine chopped egg and egg whites, celery, mayonnaise and black pepper.  Spread the egg salad on one slice of bread, top with lettuce leaves and other slice of bread.
