Chewy Oatmeal Raisin Cookies |
| Ingredients: | 1-1/2 cups all-purpose flour or white whole wheat flour 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon kosher salt 1 cup unsalted butter, softened 1-1/2 cups firmly packed brown sugar 2 eggs 1 teaspoon vanilla extract 3 cups quick-cooking oats 1 cup raisins |

| Directions: | Preheat oven to 350°F. Combine flour, baking soda, cinnamon, ginger, and salt in medium bowl; set aside. Cream butter and brown sugar in large bowl with electric mixer on medium speed 1 to 2 minutes or until creamy.
Add eggs, 1 at a time, beating until well blended after each addition. Add vanilla. Gradually add flour mixture beating on low speed after each addition. Stir in oats and raisins. Drop batter by rounded tablespoons onto baking sheets, 1-1/2 inches apart. Bake 10 to 12 minutes or until lightly browned. Cool on baking sheet 1 minute; remove to wire rack. Serve warm, if desired, or cool completely. Note: For reduced calories and a more cake-like texture, use only 1/2 cup of butter. |
