Crock-Pot Roast Chicken

Love those beautiful rotisserie chickens you see at the grocery store because they’re such a super-easy dinner option? This is your chicken recipe. The key to making it is in the seasoning. Keep the chicken from sticking to the bottom of the pot by putting several small balls of aluminum foil under the chicken.

What you’ll need:

  • 5 pound whole chicken
  • 1 tbsp paprika
  • 3 tbsp steak seasoning
  • Salt and pepper to taste

Tuscan Soup

Enjoy a taste of Tuscany with this flavorful soup, which also sneaks in kale. (Shhhh!) All you need is time to do a little bit of chopping. And if your kids quibble about the veggies, distract them with a heaping helping of parmesan cheese on top.

What you’ll need:

  • 1 medium onion, diced
  • 1 large red bell pepper, diced
  • 2–3 chicken boneless, skinless chicken breasts, diced
  • 1 15-ounce can cannellini beans (white beans), drained and rinsed
  • 1 14-ounce can chicken broth
  • ¼ cup tomato paste
  • 2 teaspoons minced garlic
  • Salt, to taste
  • Pepper, to taste
  • Rosemary, to taste
  • 2 cups fresh baby spinach leaves or kale
  • Parmesan cheese, to taste

Most Tender Pot Roast

Nothing tops our list of comfort foods quite like pot roast. The key to making this hearty version is it’s (simple) two step process. This is excellent served over mashed potatoes, noodles or rice.

What you’ll need:

  • 3–4 pounds boneless chuck beef roast, divided into 3–4 pieces
  • 1 pound of carrots, peeled and thickly sliced
  • 1 pound of celery, sliced
  • 2 onions, peeled and sliced
  • 2 envelopes dry onion soup mix
  • 1 (10.5 ounce) can cream of celery soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 2 soup cans' worth of water
  • 6 tablespoons all purpose flour
  • 5 small cubes of beef bouillon
  • 2 teaspoons garlic powder
  • 2 teaspoons fresh ground pepper
  • 3–4 medium russet potatoes, peeled and cut bite size

Honey Garlic Chicken

This crock-pot meal introduces an Asian twist with the addition of soy sauce and sesame oil -- add a little orange juice to the sauce if it gets too thick.

What you’ll need:

  • 2 pound boneless, skinless chicken thighs
  • Salt and pepper
  • 3/4 cup honey
  • 1 tablespoon of soy sauce
  • 2 diced onions
  • 1/4 cup ketchup
  • 2 tablespoons sesame oil or olive oil
  • 3 cloves of garlic, minced
  • 1 tablespoon of  tapioca flour or cornstarch mixed into 4 tablespoons of water
  • Sesame seeds

Crock-Pot Chicken Taco Bowls

 

What you’ll need:

  • 1½ lbs. chicken breasts
  • 1 (16 oz.) jar salsa
  • 1 (15 oz.) can black beans, drained
  • ½ lb. (8 oz.) frozen corn
  • 1 Tbsp chili powder
  • ½ Tbsp cumin
  • ½ Tbsp minced garlic
  • ½ tsp dried oregano
  • ¼ tsp cayenne pepper
  • ¼ tsp salt
  • cracked pepper
  • 2 cups dry rice
  • 8 oz. shredded cheddar
  • ½ bunch cilantro (optional)
